Homemade Mild Italian Sausage

Italian sausage is a term common in North America, but not so much in Italy. This dish is a specific style of pork sausage, commonly known for its fennel seasoning.

When faced with a recipe that calls for italian sausage—if you have most of the ingredients in your kitchen—it can be more economical to simply buy ground pork and season it yourself. The other perk is you have total control over what goes into it! If you love rosemary, go heavy! Don’t like spice? Maybe leave out the pepper flakes.

Here is a simple template, but make it your own!


  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried savory
  • 1/4 teaspoon dried cilantro
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons black pepper
  • 1 1/2 teaspoon red pepper flakes
  • 2 teaspoons dried parsley
  • 2 teaspoons fennel
  • 2 teaspoons salt
  • 1 tablespoon minced garlic
  • 1 teaspoon minced onions 
  • 2 pounds ground pork (or chicken or beef)


  1. Combine all of the seasonings in a small bowl.
  2. Add the seasoning mixture to 2 pounds of ground pork.
  3. Brown or cook as desired.
